Perfect for Brunch - Chicken & Waffles Casserole

Chicken & Waffles Casserole
- For Waffles (6 Total):
- 2 cups Golden Malted Waffle Mix
- 2 Eggs
- 10 oz. Water
- 4 Tbsp. Melted Butter
- For Casserole:
- 6 Eggs
- 3/4 cup Milk
- 1/4 cup Maple Syrup
- 2 Tbsp. Melted Butter
- Kosher Salt
- Freshly Ground Black Pepper
- 2 cups Chopped Breaded Chicken (cooked)
Preparation
Chicken & Waffles CasseroleFor Waffles:
- Beat egg and liquid together.
- Add Original Mix and mix well.
- Stir in melted butter and mix thoroughly.
- Ladle onto your Gourmet Waffle Baker and remove when golden brown.
- Cut into large chunks and set aside.
For Casserole:
- Preheat oven to 350 degrees.
- In a large bowl, whisk together eggs, milk, maple syrup and butter. Season with salt & pepper.
- In a large casserole dish, combine waffles and breaded chicken.
- Pour the egg mixture on top.
- Bake until waffles are crispy - about 45 minutes.
- Serve warm with maple syrup.
