Perfect for Brunch - Chicken & Waffles Casserole

Ingredients

    Chicken & Waffles Casserole
  • For Waffles (6 Total):
  • 2 cups Golden Malted Waffle Mix
  • Eggs
  • 10 oz. Water
  • 4 Tbsp. Melted Butter
  • For Casserole:
  • 6 Eggs
  • 3/4 cup Milk
  • 1/4 cup Maple Syrup
  • 2 Tbsp. Melted Butter
  • Kosher Salt
  • Freshly Ground Black Pepper
  • 2 cups Chopped Breaded Chicken (cooked)

Preparation

Chicken & Waffles Casserole

For Waffles:

  1. Beat egg and liquid together.
  2. Add Original Mix and mix well.
  3. Stir in melted butter and mix thoroughly.
  4. Ladle onto your Gourmet Waffle Baker and remove when golden brown.
  5. Cut into large chunks and set aside.

For Casserole:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together eggs, milk, maple syrup and butter. Season with salt & pepper.
  3. In a large casserole dish, combine waffles and breaded chicken.
  4. Pour the egg mixture on top.
  5. Bake until waffles are crispy - about 45 minutes.
  6. Serve warm with maple syrup.
